Galega is Portugal's own olive variety: small, naturally preserved, with a rich, nuanced flavor. These are the olives served in a little dish at Portuguese tascas before the meal arrives.

Galega olives aren't common in the US, where most jarred olives are Spanish, Greek or Californian. If you want the taste of a Portuguese table, this is the jar.

Serve them as they are, or dress them with olive oil, garlic and oregano. They contain pits.
